Fall Recipe

Judy made something similiar to this before Bradbury...she doesn't remember it...but it was very good!!
Layered Pumpkin Loaf
1c. canned pumpkin 1c.+2tbsp granulated sugar(divided)
1/2c. firmly packed brown sugar 4 egg whites(divided)
1/2c. fat free milk 1/4c. canola oil
2tbsp. flour 21/2tsp. baking powder
2tsp. pumpkin pie spice 1/4tsp. salt
1pkg.(8oz.) Neufchatel cheese(like cream cheese just low fat)
***Preheat oven to 350 F. Grease a nonstick 9x5-inch loaf pan;set aside. Mix pumpkin,1c. granulated sugar, the brown sugar, 3 of the egg whites, milk & oil in L bowl. Add flour, baking powder, pie spice & salt; stir until just moistened. Set aside. Beat cheese, remaining 2tbsp. granulated sugar & the remaining egg white with wire whisk until well blended.
***Spoon half of the pumpkin batter into prepared pan; spoon cheese mixture evenly over batter. Cover with remaining pumpkin batter.
***Bake 1 hour to 1 hour 5min. or until wooden toothpick inserted in center comes out clean. Run knife or tin spatula around edges of pan to loosen bread; cool in pan on wire rack 10min. Remove bread from pan to wire rack; cool completely.

Do they serve this at The Varsity? Mickey's Hot Dog? Mountain Man BBQ? Larry's Biscuit? (no, strike that last one :( ), Waffle House? 5 Guys and Fries?

Hey...a new business is going in Larry's...it's Friendship Cafe...I think it's only breakfast..will report back when we know more!!

Honey I'll make you all the pumpkin bread you can eat if you'll come back for Bradbury. All your fan club is in a tizzy.

Yes, I hate to even go into Bradbury now because of all the people running up to me saying "Where's Jennifer, Where's Jennifer?" When I explain, some of them, gather up their stuff, get their two dollar refund, and leave.
